Best Vegetarian Dinner, Dips and Side Dish Ideas

Are you looking for weeknight dinner or lunch ideas!? You’ve come to the right place.  I’ve put together the following vegetarian side dishes from Riri’s Greek Eats. These recipes can be enjoyed on their own, or combine a few of them together to create a more filling meal! Most of these vegetarian recipes come together with simple ingredients and are easy to follow.  Enjoy!!

1. Spanakorizo

Fresh spinach, fragrant herbs, fluffy rice, and fresh lemon zest.  This easy-to-make recipe is a great healthy, protein-packed vegetarian side dish or family dinner idea!

2. Greek Salad

​Greek salad is made with fresh ingredients like crispy cucumbers, green peppers, Mediterranean olives, thinly sliced red onions, and capers are all tossed in a simple Greek dressing of extra virgin olive oil and red wine vinegar.  Greek salad is topped with a generous amount of creamy crumbled feta cheese and dried oregano.  This simple Greek salad will transport your taste buds to a taverna in Greece!

3. Tiny Greek Potatoes

These potatoes bake quickly because of their tiny size, but they are still loaded with so much flavour and are the perfect side dish! Tossed in simple seasonings like dried oregano, olive oil, and feta cheese.  Don’t forget about the creamy honey mustard sauce to drizzle over these tiny oven-baked potatoes.

4. Lemon Potatoes

Greek lemon potatoes are baked in a generous amount of olive oil, lemon juice, vegetable stock (can also be chicken stock), and fresh herbs.  I have a feeling that these lemon potatoes will be a staple side dish for years to come.  Dip them in creamy homemade tzatziki sauce or pair them with Greek salad and rice for a nutritious and filling Greek vegetarian dinner bowl idea.

5. Spanakopita Puff Pastry Recipe

Spanakopita puff pastry is made with fresh spinach, diced green onions, fresh dill, parmesan cheese, and feta cheese, all baked under high heat in a buttery, flaky puff pastry.  Spanakopita puff pastry can be a delicious side dish or can even be enjoyed as a main course or appetizer.

6. Thick Tzatziki With Sour Cream

Homemade tzatziki is made with strained, full fat Greek yogurt, garlic, dill, grated cucumber, a little olive oil, and a dash of white wine vinegar.  Once you learn how to make tzatziki, you’ll skip the grocery store varieties.

7. Whipped Ricotta Toast

This simple recipe is ready in minutes.  Once you whip ricotta, I don’t think you’ll go back to any other method, haha.  Whipped ricotta is so creamy and so good!!  You can spread it on thick-cut toasted bread and drizzle it with honey and red pepper flakes for a little bit of heat.  Or as a dipping sauce for briam or Greek roasted potatoes.

8. Briam (Oven Roasted Vegetables)

Briam is always a popular vegetarian side dish at family gatherings or special occasions.  It can be made in a large baking dish, so it’s easy to transport, and you can make a large quantity at one time.  It’s also a great recipe because it doesn’t require a lot of hands-on cooking time, and it’s an easy way to eat your veggies.

 

The main vegetables in traditional briam include sliced eggplant, zucchini, bell pepper, red onions, tomatoes, garlic, fresh parsley, dill and plenty of olive oil. The vegetables are then baked for at least an hour so that they become soft, sweet, and so flavourful!

9. Greek Rice

A simple side that can be paired with any of these delicious vegetable side dishes for a more filling Greek dinner idea.  To get your tastebuds excited, here are a couple of ideas! Layer Greek rice on the bottom of a bowl, top with Greek roasted vegetables, whipped ricotta, and a drizzle of balsamic vinegar glaze.

 

Or, top Greek rice with a generous amount of oven-roasted tofu and a side of tzatziki sauce for a healthy meal.  You could also use white rice, brown rice, or another rice variety instead of Greek rice if you’d like!

10. Tirokafteri (Spicy Feta Cheese Dip)

Tirokafteri is a delicious spicy feta cheese dip.  It has a creamy consistency and comes together in minutes.  Serve with warm pita bread, roasted vegetables, or with tofu for a spicy kick!

11. Greek Pasta Salad

Greek pasta salad is surprisingly filling and easy to make as a main dish.  You can follow the easy steps in the recipe as a guideline and customize the add-ins to your taste preferences.  For instance, swap out the sundried tomatoes for fresh tomatoes, or add in some extra vegetarian protein like garbanzo beans.

12. Greek Dandelion Greens

Dandelion greens are a healthy side dish that is very popular in Greek restaurants.  The greens are boiled in water and then strained and tossed in olive oil, a pinch of salt, and fresh lemon juice. Overall, dandelion greens are a great side dish full of antioxidants and quick to make.

13. Spanakopita With Homemade Phyllo Dough

One of my most favorite recipes! This recipe is not the easiest, but the end result is so worth it.  Fresh spinach, dill, creamy feta, and green onion filling baked in between layers of homemade phyllo dough.  Spanakopita goes so well with tzatziki dip and Greek salad.

14. Oven Roasted Greek Tofu

Tofu is high in calcium, iron and protein.  Tofu naturally takes on the flavours it’s marinated with, and what better flavour than a yummy Greek marinade Dice up the tofu and marinate the tofu for as long as possible.  Then, pop these flavourful tofu in the oven, and they’re ready to eat in less than 30 minutes!

 

For a vegetarian souvlaki option, you could wrap Greek tofu in warm pita bread and top it with a generous amount of tzatziki, diced tomatoes, finely sliced onions, french fries, crumbled feta cheese and some dried oregano.
