Easy Pan Fried Sausage, Peppers, and Onions (Spetsofai)
Spetsofai is made with juicy sausages, sweet bell peppers, and onions. This Greek appetizer comes together beautifully in one frying pan with just a few simple ingredients.
Prepare the ingredients. Slice the sausages into bite-sized pieces. Chop the bell peppers and onions. You don't want them to be too small otherwise, they will cook too quickly.
2 large sausages, 3 bell peppers, 2 yellow onions
Cook the sausages. Heat olive oil in the pan and add the sausage in a single layer. Cook for 3-4 minutes per side until browned and cooked through. If uncooked, fry longer until cooked. Transfer the sausage to a plate and set aside, leaving the oil in the pan.

Sauté the veggies. Add the chopped onions to the pan and sauté on medium-low for 10 minutes, until softened. Then add the bell peppers (and cherry tomatoes, if using) and cook for another 30 minutes uncovered, stirring occasionally. Sprinkle in the red chili flakes, salt, sugar, black pepper, and thyme. Cook until the vegetables are tender but not mushy.

Mix in the wine and sausages. Pour in the white wine, give the ingredients a stir and then add back in the cooked sausage slices. Cook for another 5-10 minutes so that all of the flavours can come together. Serve hot with fresh bread or over rice.

You can adjust your seasoning depending on which kind of sausage you use. For instance, if you're using hot Italian sausage, then you may want to omit the red pepper flakes. You can also adjust the salt and pepper depending on your preferences.
Use a large, wide non-stick frying pan so that the sausage can cook in a single even layer in the pan and so that there will be enough room once you add in all of the vegetables.
Chop the bell peppers and onions into squares or thicker pieces. If they're cut too thin, they will become too soft during the cooking process.
