Creamy Feta, Dill and Cucumber Salad

This creamy cucumber salad is perfect for summer! Made with crisp cucumbers, feta cheese, fresh dill, and pine nuts all tossed in a tangy honey mustard dressing. This salad is so easy to make and it's absolutely delightful!

Ingredients

  • 1 English cucumber about 1 to 1¼ cup diced
  • 85 grams crumbled feta cheese (3 ounces)
  • 2 tablespoons fresh dill diced
  • 2-3 tablespoons pine nuts lightly toasted
  • 2 tablespoons olive oil

Honey Mustard Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon dijon mustard
  • 1/2 tablespoon lemon juice
  • 1/2 tablespoon honey
  • pinch of salt
  • pinch of pepper

Instructions

  • Step 1: Toast the pine nuts. In a small frying pan, pan-fry the pine nuts until they become lightly toasted and fragrant.

  • Step 2: Prepare the dressing. Whisk together the mustard, olive oil, lemon juice, honey, salt and pepper in a small bowl.

  • Step 3: Wash, dry, and chop the cucumbers. Slice the cucumbers vertically down the centre. Then, lay flat and slice vertically down the centre again. From there, chop the cucumbers to your desired thickness.

  • Mix together: Combine the chopped cucumber, crumbled feta cheese, dill, and toasted pine nuts in a large bowl. Pour the honey mustard dressing over the salad and mix until evenly coated. Drizzle with a little more olive oil and adjust the quantity of ingredients as desired.
