WHY YOU’LL LOVE THIS RECIPE

Homemade Greek fries are a simple recipe for when you have friends over, or you’re watching the big game with the whole family, or you just have a craving for some Greek fries. Smothered with crumbled feta cheese, sautéed red onions, fresh tomatoes, kalamata olives, and topped with homemade Greek tzatziki!

 

A bonus is that you can easily make and serve these delicious fries on the baking sheet so that there are fewer dishes to clean.

 

Baking fries in the oven allows you to bake a large batch at a time compared to pan-frying. Once the fries are in the oven, you can prepare the toppings!

What Are Greek Fries Made Of?

For this recipe, I use Yukon gold potatoes baked first at a lower temperature, then increasing the temperature slightly and allowing the potatoes to bake at higher heat. Greek fries are topped with crumbled feta, diced cherry tomatoes, finely sliced pan-fried red onion, kalamata olives and dry oregano!

Should I Soak The Potatoes Before Baking? 

Yes! It’s one of the secrets to crispy fries because it removes some of the starch from the potatoes. The cut potatoes should soak for about 30-45 minutes in cold water.

 

An added benefit is that when the cut fries are in the water, it prevents the potatoes from turning brown while preparing the other toppings. There should be enough cold water in the bowl to fully cover the potatoes.

 

When you’re ready to place the potatoes on the baking sheet, be sure to dry the potatoes well using a salad spinner, paper towel, or clean kitchen towel before baking. Drying the potatoes will help them get nice and crispy! See below for more tips for crispy baked fries!

How Do I Make Baked Fries Crispy?

  • Soak the cut fries for 30-45 minutes in cold water.
  • Dry the fries really well before placing the fries on the baking sheet. This step is just as important as soaking them in water, so it’s best not to skip it.
  • I use a baking sheet with a wire rack inside. But if you don’t have a wire rack, you can place the fries on parchment paper or the non-stick baking sheet directly.
  • Extra virgin olive oil is a key ingredient for crispy fries, so be generous with the oil!
  • Bake the fries at 375 degrees F on convection bake for 25 minutes and then increase the heat to 400 degrees F and bake for 5 minutes.
  • Spread the cut potatoes in a single layer on the baking sheet or wire rack.

RECIPE NOTES

  • I recommend using Yukon gold potatoes, also known as yellow potatoes, because they get crispier and cook beautifully in the middle.

 

  • You can wash the potatoes well with warm water and leave the skin on when you cut them into fries or remove the skin entirely, but it’s up to you!

 

  • It’s important to try to cut the fries in similar width sizes so that they cook evenly. The size of the fries and oven temperature will vary for everyone, so it’s a good idea to keep an eye on your fries so that they don’t burn when baking.

HOW TO MAKE GREEK NACHO FRIES: STEP BY STEP

STEP 1: Peel and clean four Yukon gold potatoes. Slice them in half lengthwise and then cut them into fries. Place the cut fries into a large bowl with cold water and let the fries soak for about 30-45 minutes. There should be enough water in the bowl that the water fully covers the fries.

 

STEP 2: Preheat your oven to 375 degrees F on convection bake.

 

STEP 3: Peel and finely slice the red onion. Sautée the slices of red onion in a frying pan with about 1 tablespoon of olive oil. Keep an eye on the onions and cook them on low-medium heat so that they don’t burn. Gradually stir the onions for 7-10 minutes.

 

Then, add 1 teaspoon of white wine vinegar and 1/2 teaspoon of white sugar. Stir the onions with the vinegar and sugar for a couple of minutes, and then remove from the heat and set aside. The white wine vinegar adds a really nice flavour and brightens the onions!

 

STEP 4: Slice the cherry tomatoes in half and slice the kalamata olives in half. Option to cut into quarters if you’d like the tomatoes and olives to be smaller.

 

STEP 5: After the potatoes have been soaking in the water for at least 30 minutes, drain the potatoes and dry the potatoes really well using a paper towel or clean kitchen towel. Add the olive oil, lemon juice, seasoning salt, oregano, paprika, and garlic powder to a small bowl, and whisk together.

 

STEP 6: Then add the seasoning mixture to the dried potatoes. Mix well together using your hands so that the potatoes are evenly coated. Place the potatoes in a single layer on a baking sheet or wire rack and allow the fries to bake in the oven for 25 minutes at 375 degrees F on convection bake.

STEP 7: After 25 minutes, you may need to rotate the baking sheet or mix the potatoes. Then, increase your oven temperature to 400 degrees F on convection bake and place the potatoes back in the oven for another 5 minutes.

 

The amount of time needed for the potatoes to bake will vary based on your oven and the size of your fries, so it’s a good idea to keep an eye on the potatoes so that they don’t burn. The amount of time you bake your fries will also depend on how crispy you like them!

STEP 8: Remove the fries from the oven and top them with crumbled feta cheese, sautéed red onions, cherry tomatoes, kalamata olives, dried oregano, and fresh Italian parsley.  Place the fries back in the oven for a few minutes.

 

Remove them again from the oven and serve with creamy tzatziki sauce and a fresh lemon wedge.

How To Store Greek Nacho Fries?

These homemade fries are best enjoyed out of the oven and served warm. However, because they’re topped with crumbled feta, tomatoes, onions, and kalamata olives, they may not keep as well in the fridge for more than a day or so without getting soggy. If you’d like them to keep longer, you could store the fries and toppings separately and only make the amount you need.

 

These homemade Greek fries can easily be reheated in the oven at 325 degrees F on convection bake for about 10-15 minutes and then freshly topped with crumbled feta cheese, tomatoes, onions, and kalamata olives.

Ingredients

  • 4 medium-size Yukon gold potatoes
  • 3 tablespoons extra virgin olive oil

  • 1/2 teaspoon garlic powder
