Fresh dill: This aromatic herb brings a burst of flavour and truly shines in this refreshing cucumber salad!
Feta cheese: A creamy, crumbly, tangy cheese made from sheep’s milk or a blend of sheep’s and goat’s milk. Feta has a bold taste and adds so much depth to salads.
How To Make Cucumber Dill Feta Salad: Step-by-Step
Step 1: Toast the pine nuts. In a small frying pan, pan-fry the pine nuts until they become lightly toasted and fragrant.
Step 2: Prepare the dressing. Whisk together the mustard, olive oil, lemon juice, honey, salt and pepper in a small bowl.
Step 3: Wash, dry, and chop the cucumbers. Slice the cucumbers in half along the middle. Then, lay flat and slice down the centre again. From there, chop the cucumber into your desired thickness.
Step 4: Mix together. Combine the chopped cucumber, crumbled feta cheese, dill, and toasted pine nuts in a large bowl. Pour the honey mustard dressing over the salad and mix until evenly coated. Drizzle with a little more olive oil. Adjust the quantity of ingredients as desired. Serve immediately!

- 1 tablespoon dijon mustard
- 1/2 tablespoon lemon juice
- 1/2 tablespoon honey
- pinch of salt
- pinch of pepper
