Step 1: Prepare the yeast mixture by combining warm oat milk and one packet of yeast

Step 2: Egg, sugar, vanilla extract, honey melted butter and warm oat milk whisked together

Step 3: Combine egg mixture with the yeast mixture. Add in flour and salt to form a dough ball

Step 4: Cover the dough with a kitchen towel and allow the dough to rest for 30 minutes or until its doubled in size

Step 5: Prepare the baklava filling.  Lightly toast and grind almonds & walnuts. Combine brown sugar and cinnamon

Step 6: Roll out the  dough into a large rectangle.  Spread with vegan butter and baklava filling.  Tightly roll the dough into a log

Step 7: Cut the cinnamon roll log into pieces and place them in a baking dish.  Allow the cinnamon rolls to rise for another 30 minutes

Step 8: Pour 1/2 a cup of warm oat milk over the cinnamon rolls just before they go into the oven.  Bake for 22-25 minutes

Step 9: Remove the baklava cinnamon rolls from the oven and cover with honey vanilla icing!
