Dairy-Free Creamy Rice Pudding Recipe

This recipe for rizogalo (rice pudding) is dairy-free but it is just as creamy and delicious as the rice pudding I grew up with!

Step 1: Combine 1/2 a cup of uncooked short/medium grain white rice and 1 cup water in a small saucepan

Step 2: Simmer the rice on low heat and cover until the rice has absorbed all of the water.

Step 3: While the rice is cooking, heat 6 cups of oat milk until the milk is warm. Combine the cooked rice with the warmed oat milk.

Step 4: Add the lemon rind, orange rind, white sugar, vanilla extract, and cointreau. Simmer until the rice pudding thickens.

Step 5: Increase the heat, add cornstarch liquid, and stir quickly and consistently.

Step 6: Transfer the rice pudding into individual serving bowls.  Sprinkle with cinnamon and enjoy!
